I am a legitimate oatmeal cookie monster... I just counted, as well as January 2018, I have shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of them yet? (? They are some of the most well-known recipes in my blog cause they taste really sweet and cozy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!

Immediate oats are smaller and thinner than conventional rolled oats, and you may find them in canisters right next to those traditional oats in the grocery shop.
I probably sound like a broken record by now... But because I ? you and need your cookies to turn out totally soft and chewy, I'm reminding you again... Measure your flour and oats properly, applying this method or a kitchen scale! (? That's the one I own and enjoy. It just cost $20!) Too much of either ingredient is likely to make your cookies taste cakey or dry, as opposed to chewy. This is particularly true of the oats--that they behave like little sponges and consume lots of moisture out of your cookie dough!

See those bananas? And all of those brown spots? When it comes to baking with bananas, brown = beautiful! I ? additional speckly bananas because they've so much bright, bold taste --and also extra sweetness! That is the minimum number of brown which I recommend. More is even better!
The remaining part of the cookie dough's sweetness comes in another pure ingredient... Pure maple syrup (such as this!) . You want the sort that comes directly from pine trees, which is generally offered in thin glass jars or squat, round plastic jugs. Skip the pancake sugar and sugar-free syrup!

The raisins add much more natural sweetness! The freshly bought, additional plump, perfectly soft ones are perfect... But if you have old, slightly dried out raisins (hmm... it sounds absurd to explain dried fruit as dried out! ) , that is okay!
Only add them into some microwave-safe bowland put water on top until they're totally covered. Seal plastic wrap over the surface, and then microwave the bowl on high for 1 second. If you let the peppers sit mixing together the cookie dough, then this small trick hydrates them they're incredibly succulent --and that makes a major difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
The recognizable comfy spices and plump raisins make them even more irresistible. They'll keep for at least one week if stored in an airtight container in the fridge --if they last that long!
1 cup (100g) instant oats (fermented if needed and measured like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 teaspoon baking powder
1/4 tsp salt
2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 article teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In a separate bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Add in the flour mixture, stirring only until incorporated.
With a spoon and spatula, drop the cookie dough to 15 rounded scoops onto the sheet, and apply to the desired depth and width by means 30 Vegan Cookie Recipes Without Margarine or Egg Replacers of a spatula. Bake in 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to measure both the oats and flour properly using this technique or even a kitchen scale. (? That is exactly the one I own and adore!) Too much of either will dry out the biscuits and render them cakey instead of chewy.
Instant oats are also referred to as quick-cooking or minute oats. They arrive in large canisters, exactly like old-fashioned oats. They are not those in the small flavored packets of oatmeal. To make your own, add the same amount of traditional oats to a food processor, and pulse 10-12 times or until the oats are about 1/4 into ? of the original size.
For the gluten-free flour, I recommend the following blend: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, 2 tbsp (15g) brown rice bran, and 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (such as this one!) Will also do the job, if measured like this.
If your raisins are mature, drier, and not too plump or succulent... Add them into a microwave-safe bowland pour water on top till they're totally coated. Seal plastic wrap across the top, and microwave the bowl on high for 1 minute. If you allow the raisins sit while mixing together the cookie dough, this small trick hydrates them they're really soft and succulent!
